I once went on a skip trip with a group of friends and we had a French guy with us and he made so much crepes we just ended up eating savory crepes for dinner and breakfast and made sweet crepes as dessert lol

Hard to acquire ingredients for the average person, but if you really want to treat yourself, here's the two best crepes I make:

seared foie with crushed pistachios, fig jam, and mirin/soy/miso glazed cremini mushrooms.

grilled miso glazed eel with white chocolate potato puree and granny smith apple pieces.

I'm a big sucker for savory crepes, my go-to recipe is some swedish pancake batter I get from the store and is pretty thin(I can't find crepe mix there usually), and use either ham or turkey with mozzarella cheese topped with pesto sauce for a great blend of gooey goodness. Always a super enjoyable lunch for me!
turkey with mozzarella and pesto sounds freaking amazing.

Crepes with chopped spicy chicken (marinaded in some sweet/spicy sauce of your choice), diced tomatoes, chopped onions, jalapenos.

Basically a spicy taco, but wait there's more.

Melt a bit of butter in a pan and simmer it (don't boil it to where it starts spattering all over). Take premade "spicy crepes" and grill them on the pan, flip them over. Add Cajun/Creole seasoning to the outside of the crepe, cook some more and flip. Same on other side.

After you are done, you have an amazing, savory, spicy crepe.
