but if i were to start watching an anime and i've watched almost nothing before, what should i watch?
and by almost nothing, i mean like other than the most basic, americanized crap (pokemon, a little sailor moon, etc) and the only "real" anime i've watched is deadman wonderland.

every time i hear about neon genesis evangelion i just think of robin williams
Once you have watched several good anime such as The Melancholy of Haruhi Suzumiya, Baccano!, Outlaw Star, and Code Geass, you can start tackling the long anime. Long anime have the odd quality known as "Filler", Any anime greater than 100 episodes has filler whether necessary to fill time gaps or just there for $$$, the majority is badly written and adds nothing to the plot. InuYasha would be the first long anime to watch, consisting of ~200 episodes (~160 excluding fillers). Other long anime with a strong plot would be Bleach (99% filler), Naruto (the Internet is an apocalypse of spoilers), Fairy Tail (bit too much fanservice), and One Piece (my favorite long anime; very emotional).
Now, I'm not the kind of guy who cries during animation, but some of the following anime will make you reconsider how dramatic some storylines can be.
After experiencing a wide variety of anime, I would recommend checking out some of my favorite anime: Berserk (1997), Neon Genesis Evangelion, Cowboy Bebop, Death Note, Monster, Hunter x Hunter, Clannad (followed by Clannad After Story), and Steins;Gate. All of them are very emotional and thought-provoking. In fact, during Clannad, I cried through 5 whole episodes straight. Hunter x Hunter is one of those anime that I can't get my head around: it doesn't look like an interesting anime at first, but for some reason, I am so hooked to the series that I just want to watch more Gon. There is something hypnotizing about Hunter x Hunter that gets you attached to the story and characters. You want to watch them grow and get stronger! Berserk has a very... errr... interesting ending that I probably wouldn't watch while company is around. For the last two episodes of Evangelion, you need to watch by yourself and get mentally prepared. They're all amazing and cannot be compared to. Have fun!
Gintama has A LOT of Japanese references (which is the reason there is no English translation). You won't get it just by starting anime.
There are some bad really overrated anime out there such as Blue Exorcist, Darker than Black, and Spice & Wolf. Don't watch any of them you want predictable and mundane story lines, forgettable characters, and nonlinear development of plot and characters.
To be honest, the best "starter anime" would be Fullmetal Alchemist Brotherhood. Not one of my Top 10 anime, but is disputed as being one of the best anime. It has everything that a good anime should have and more.

i forgot to include angel beats and gintama and fma but theyre also my favorites! fma is a good place to start too. watch angel beats or ano hana if you want some tearjerkers
Alright I am an anime expert here. I don't really know your taste in anime but I'll set up the categories Comedy: Gintama is my best recommendation at first I started watching it, it was really funny but after you get use to it you'll see how truly amazing it is. It also have moments when it gets serious WHICH IS SO AMAZING. Action: Fullmetal alchemist is an amazing action anime, it is a bit long although. If you want to watch a short action anime Fate/Stay night unlimited blade works is just amazing Sports: You can watch kuroko no basket if you want to watch like more of an "anime" basketball or slam dunk which is also amazing SciFi: I would watch Steins;gate it is just so amazing its a time travel anime. Music: Shigatsu wa kimi no uso, If you watch this do not read anything about it you will get spoiled 100%. Movies: Watch Ghibli movies it is just watch it all of them ANIMES I MOST RECOMMEND WATCHING IS: Code Geass it is really just good WATCH ANGEL BEATS IT GOOD TOO tHIS list is mostly mainstream because mainstream is main for a reason xD perfect for new people
bungou stray dogs is very nice.. I like it; its very short-- believe 8-12 eps? ^_^

a good first anime is ouran high school host club. once you get past that, watch the other beginniner weeb anime: durarara, gurren lagann, soul eater, FLCL, death note (ive only seen durarara and ouran out of all of those). uh my personal favorites are tsuritama, mawaru penguindrum, and kekkai sensen
dont start with evangelion or penguindrum !! theyre confusing af

hm...have you watched "cardcaptor sakura"? its a v cute magical girl anime... oh or maybe for something funny, you could try "one punch man"... im sorry...i only know shows that i find interesting and not much else...

you're gonna be recommended a lot of critically acclaimed shows but if you're new to anime you probably won't appreciate or get into them much. for example, i started off watching evangelion because it was so highly-touted by critics and was thoroughly bored throughout the entire thing.
i'd personally go through this chart and pick something that looks interesting/appealing http://i.imgur.com/HWUbUDg.jpg if you enjoyed that then you explore that particular genre and watch shows similar or other stuff done by the creator. that's how you develop your own taste.

if you want something easy to get into try samurai champloo, if you don't mind 3 slow starting episodes go for steins;gate (personal favourite), if you like firefly go for cowboy bebop, if you like psychological thrillers go for code geass
