A big Mediterranean cruise is absolutely fantastic. One of the 2 week cruises that let you see Spain, France, Italy, Croatia, Greece and Turkey in particular. The downside is that you don't experience nightlife really on a cruise, as you have to be back to the ship before it leaves.

Considering Latin America, though, the Incan ruins in Peru and Bolivia are worth a visit, so I've heard. And quite different to a standard vacation.

Really though, it depends on budget & what type of holiday you like. If you want to see lots of cool historic stuff, I can give recommendations. If you want beaches & tans, not so much.
