Because it gives food another taste... it's actually delicious, every meal cooked in a fireplace gives like a soft wooden-smoke taste that's unique in my opinion, plus im used to cook either in fireplace or in clay's oven, i live in the open "campo"/ country, practically in the middle of nowhere, and sometimes i don't even have like normal gas, so i cook with what i have to feed my brothers & the rest of the family(father and the employees here)
